Growing up, my sister was given the nickname "Cookie" from our dad, for her love of cookies and Cookie Monster. To this day, Brooke still gets called "Cookie" or even "Cook" for short. My darling sister loves sweets almost just as much as I do. Ok, maybe just as much as I do :) That's part of the reason I love her so dang much. We really get each other in terms of our love for food.
I may not have been nicknamed after a dessert like Brooke, but that doesn't mean my love for them is lacking. It is farrrrr from lacking. But you already knew that.
Choosing a favorite kind of cookie is soooo difficult, but deep down I think I know thick and chewy oatmeal cookies have my heart. Frosted sugar cookies? Yes, please. Warm, melty chocolate chip cookies? Yessss pleaeeeese, and don't forget the milk! But add oatmeal to the mix and that's it. I may glance at the others and give them consideration, but oatmeal seems to always win out.
Guess what? It's just as good! Oatmeal always adds such nice texture and combined with the banana in these particular cookies, you can't get much healthier either.
These could easily be eaten for breakfast just as well as a snack or dessert. They are sweet, but not too sweet by any means. Go ahead, have a bite.
Cinnamon Banana Oatmeal Cookies
(Adapted from Skinny Taste)
Makes about 2 1/2 dozen cookies
1/2 cup whole wheat flour
1/2 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 tablespoons unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup mashed ripe banana (I used 1 whole banana)
1/2 teaspoon vanilla extract
2 cups rolled oats
1/2 cup cinnamon chips
1. Preheat oven to 350 degrees. Spray cookie sheet(s) with non-stick spray and set aside.
2. In a medium bowl, whisk together first five ingredients.
3. In a separate medium or large bowl, add butter and sugars. Beat on medium speed until well-blended. Add the egg, then add the banana and vanilla. Continue to beat until all ingredients are well-combined.
4. Add flour mixture and oats to the wet ingredients. Stir to combine. Stir in the cinnamon chips.
5. Drop spoonfuls of dough onto baking sheets. Bake for about 10-12 minutes, or until top and edges of cookies become brown.
6. Remove from oven. Transfer to cooling rack for at least about 10 minutes.
